[documentation] Benefits of Open Research

I've added a placeholder file under docs/community/open-research-benefits.md which is served on the community pages here: https://open.win.ox.ac.uk/pages/open-science/community/Open-WIN-Community/docs/community/open-research-benefits/

(This is currently placed as the third item under "Open WIN Community" but can easily be put somewhere else if there is a better place.)
